MEKANISME PURCHASING SECTION DALAM PEMBELIAN BAHAN MAKANAN DI FOX HOTEL PEKANBARU
Abstract
Hotel is a type of accommodation that uses part or all of the building, to provide lodging, eating and drinking services and other services for the public which are managed commercially. Hotels as a complete business that provides various facilities for the needs of tourists are increasingly mushrooming in Indonesia, especially Pekanbaru City. One of the hotel's income, namely the sale of food at the hotel, of course, cannot be separated from the party responsible for production, namely the Food and Beverage Product or often called the Kitchen Section. Guest comfort is a priority that must always be maintained by the company. Therefore, Fox Hotel considers the importance of purchasing goods which is the initial stage in a production process that will provide maximum results to guests. This study aims to determine the mechanism for purchasing food ingredients from the Kitchen that applies in the Purchasing Section of Fox Hotel Pekanbaru. With qualitative methods. By using 4 sample sources, namely chief accounting, purchasing supervisor, receiving, executive chef. The data collection technique in this study was the observation and interview system used by Fox Hotel Pekanbaru, namely the Visual Hotel Program. Purchases are made in 2 ways, namely parishable class materials, namely daily market lists and purchase requests, while groseries materials are store requests. Suppliers do not use a contract system but by establishing good cooperation. Orders are made by contacting the supplier the day before delivery by the supplier which is carried out during working hours. The goods received must be checked first for completeness and suitability by the receiving after it is stored in the store.
