Abstract


Tourism is a new type of industry that is able to generate rapid economic growth in providingemployment, increasing income, living standards, and other productivity. To develop this tourism potential, it cannot be separated from facilities and infrastructure. One of the facilitiesthat can support tourism is a restaurant. A restaurant must have its own charm so that it can improve the balance of the restaurant. Several large hotels, especially four-star hotels, have restaurants which of course must have standard standards to run restaurant operations. Currently, one of the four-star hotels, Novotel Pekanbaru is a hotel that provides various facilities and ccommodation
services to local guests and international guests who visit. The hotel has a restaurant which is open dailywith local and international dishesserved. However,a hotel must provide the best facilities and
manage a restaurant. To improve the quality of a restaurant, it is necessary to note that the restaurant has adequate standard aquipment so thatthe production process and comfort can be
achieved properly. The standard of restaurant equipment at least has adequate and sufficient furniture, linen, china wares, glass wares and silver wares. Therefore, this study aims to find out how the Standards for Completeness of Restaurant Equipment at the Novotel Hotel Pekanbaru are.
This study uses qualitative methodsto analyze problems based on data collection techniques in the form of observation, interviews, and documentation. The Standard for Restaurant Equipment Completeness is carried out in order to increase the Standard for Restaurant Equipment Completeness at Novotel Pekanbaru.Based on the results of the research that has been carried out, for the overall results of the interviews and documentation observations it can be concluded that the Standard for Restaurant Equipment Completeness is carried out in order to increase the Standard for Restaurant Equipment Completeness at Novotel Pekanbaru is appropriate and
adequate fromthe standard for restaurant equipment completeness.
